Warm Fruit Breakfast Bowl with Apricots and Strawberries

One of the most common questions that we receive regarding fruit for breakfast, is ‘how can it be enough, won’t I get hungry or I will get hungry within an hour or two?’ When gently cooked with a little ghee and spices and of decent quantity, fruit is a delicious and nourishing way to begin the day. 

Fruit digests much quicker than other foods, therefore it’s best to enjoy it away from other meals, hence having it for your first meal of the day. However, as you will see in this recipe, having a good portion of fruit is key. Chewing it thoroughly and in some cases slightly stewing the fruit will also enhance digestibility and feeling satiated.  

Using peaches, strawberries, and apricots, this fragrant and refreshing dish is especially lovely when you feel like a light meal on a summer day. We suggest using no more than three varieties of fruit and lightly cook them together for balanced agni. 

 

Augmenting

SERVES: 1 person

PREPARATION TIME: 7 minutes


You'll need:

  • 1 tbsp ghee

  • 1 small pinch salt

  • 1 pinch cinnamon

  • 1 pinch dried flowers, jasmine or rose 

  • 1 fresh peach quartered. If large, quarter and then cut each quarter into smaller wedges

  • 3 fresh apricots quartered

  • 6-10 chopped strawberries

  • 2-3 tbsp water

  • 5 tiny slices of fresh vanilla bean or dash pure vanilla essence 

  • 1 tsp finely minced mint leaves for garnish


Here's how:

  1. In a heavy bottomed pot or small skillet, melt the ghee over medium heat

  2. Add the salt, cinnamon, dried flower petals and vanilla

  3. Stir in the fruits, covering with the ghee and spices, then add water

  4. Reduce heat to low, cover and cook gently for 2-3 minutes

  5. Serve with minced mint leaves


Tips & substitutions:

Experiment with seasonal fruits and berries available to you for more flavorful combinations. Cooking the fruits reduces the sourness allowing the sweet taste and other tastes to flourish.
